Yield: 4 – 5 servings
Everyone likes stuffed peppers, so try this one on your family.
- 4 – 5 large green peppers
- 1 pound ground chuck
- ¾ cup bread crumbs
- ½ cup grated Romano cheese
- 1 egg, beaten
- ½ can (8 ounce) tomato sauce
- ½ cup finely chopped onion
- ½ teaspoon garlic salt
- ½ teaspoon chopped parsley
Wash peppers well and cut a slice from stem end, remove seeds and membrane. Combine remaining ingredients and stuff peppers with meat mixture. Place peppers in a baking pan, foil pan or double thickness of heavy-duty foil. Top peppers with remaining tomato sauce and place on smoker grid to water-smoke.
Charcoal: Use 5 pounds charcoal, 3 quarts hot water, 1 wood stick and smoke 1 ½ - 2 hours.
Electric: Use 2 quarts hot water, 1 wood stick and smoke 1 ½ - 2 hours.
