So-Simple Stuffed Pork Chops
Yield: 4 – 6 servings

Sliced onions really flavor these chops and the preparation is so simple.

  • 4 – 6 1 ½ inch pork chops, with pocket
  • 2 onions, sliced ¼ inch thick.
  • 1 green pepper cut in strips
  • 1 jar (2 ounces) chopped pimentos
  • BBQ or seasoned salt
Fill each pork chop first with onion slice, green pepper strips and chopped pimentos. Season chops on both sides with BBQ salt and place on smoker grid. Prepare smoker and smoke.

Charcoal: Use 5 pounds charcoal, 3 quarts hot water, 2 wood sticks and smoke 2 – 2 ½ hours.

Electric: Use 3 quarts hot water, 2 wood sticks and smoke 1 ½ - 2 hours.
