Smoked Cornish Game Hens

Ingredients:

2 game hens (split)
Fresh basil (chopped)
Fresh oregano (chopped)
Fresh thyme (chopped)
Fresh rosemary (chopped)
Fresh sage (chopped)
Coarsely ground black pepper
Garlic salt

Fill water pan 3/4 full with liquid. Rinse hens under cool water and pat dry with paper towel. Carefully pull back skin off entire half of split hen.  Brush the meat of the hen with olive oil, sprinkle with coarsely ground pepper, garlic salt and all chopped herbs. Reassemble skin back over hen.  Brush skin with olive oil, sprinkle with coarsely ground pepper, garlic salt and all chopped herbs.
